Ingredients:
- 2 Glasses Basmati Rice
- 1 medium Onion
- 3 medium Green Chillies
- 1 piece of Ginger
- 1 medium Tomato
- 2 tbsp Coriander Leaves
- 2 tbsp Mint Leaves
- 0.25 Cup Carrot
- 0.25 Cup French Beans
- 0.25 Cup Green Peas
- 2 tbsp Oil
- 2 tbsp Ghee
- 4 pieces Cloves
- 2 pieces Cinnamon
- 2 pieces Cardamom
- 1 tsp Salt
- 8 pieces Cashew Nuts
- 1.05 Glasses Water
- 1 a pinch of Turmeric Powder
- 1 tbsp Lemon Juice
Cooking Steps for Vegetable Biryani:
Step 1 :
Heat ghee in a cooker, fry cinnamon, cardamom and cloves.
Step 2 :
Once it gets aromatic, add onion, green chillies, ginger & garlic and fry till the onion turns golden brown.
Step 3 :
Allow it to cool down for sometime and grind it into a smooth paste by adding mint and coriander leaves. The paste should be greenish in colour.
Step 4 :
In the same cooker, add oil, fry cinnamon, cardamom and cloves one each.
Step 5 :
Add tomatoes and fry till it cooks.
Step 6 :
Add grounded paste and turmeric powder, fry it for about 2 minutes.
Step 7 :
Add vegetables and water.
Step 8 :
Add salt as required and allow the water to boil with the veggies for 5 minutes.
Step 9 :
Now, add basmati rice and squeeze lemon juice.
Step 10 :
Cover the lid and keep it until the first whistle blows. Turn off the flame once done.
Step 11 :
Serve hot with raita or any spicy curry.
