- 3 medium Brinjal
- 3 medium Tomatoes
- 2 Cups Cheese
- 3 pieces Garlic
- 1 tablespoon Mint Leaves
- 0.05 tsp Black Pepper
- 1 tsp Salt
- 2 tablespoon Cooking Oil
Cooking Steps for Brinjal Cheese Bites:
Heat oil in a pan add in minced garlic, toss them slightly and add in finely chopped tomatoes.
Saute the tomatoes until they are mushy and the oil starts to separate. Now, add in finely chopped mint, salt and ground pepper, stir and keep aside.
Slice brinjal into 1/2 inch thick discs. Heat a little oil in pan and gently fry the brinjal slices till they are slightly brown on both sides.
In the same pan add in 2 tbsp of oil and arrange the brinjal slices and arrange it in one single layer.
Spread the prepared tomato sauce over the brinjal slices evenly and top it generously with grated cheese.
Cover the pan with the lid and cook on low flame for 20 minutes until the cheese is melted.
